SUN51 is an α-amylase preparation used to modify starch. At above
gelatinization temperature of starch, starch slurry will become too viscous to
handle. SUN51 is designed to control the viscosity of starch slurry when
necessary. The viscosity reduction can
be stopped by raising temperature to above 95 ° C where the enzyme denatures
and stops its functioning. With the use of SUN51, the viscosity can be adjusted
to meet the production requirements at the production site, which offers great
flexibility in using oxidized starch.
