The product is specially developed for the processing of fruit juice. It’s made from finely selected microbial strain by submerged fermentation followed by purification and formulation. The product contains potent activities to destruct fruit cell and maximizes juice yield.
Plant cell wall is made
up of different kinds of chemical substances including cellulose, hemicellulose
and pectin. The pectinases, cellulase, hemicellulase and pectinases in the
product disintegrate their respective substrates in cell wall, release all the
juice within cell and turn fruit into juice. The activities are carefully
selected to avoid the production of galacturonic acids and cellubiase.
