The product is produced by submerged fermentation of a selected fungal strain followed by purification and formulation. Cellobiase is also named β-glucosidase with the Art No. BGL. It is a hydrolytic enzyme with the family name of β-D-glucoside hydrolase or gentiobiase. It also exhibits transglycosidase activity.
Cellobiase (Beta-Glucosidase) is part of cellulose degrading enzymes,
acting on cellobiose or cello-oligosaccharide, and together with exoglycanases
and endoglucanases completely hydrolyzes cellulose into glucose. In addition, the
enzyme is capable of breaking down β-glycosidic links on glycosides, removing glucose from its aglycone.
Many precursors of functional components in plant extract or food are
glycosides. Cellobiase can work on these precursors to liberate the wanted functional
components.
